Easy recipe to make a vegetable soup at home for ulcer patient

You will need (Make approximately 10 cups)

  • 1-pound onion (3 medium)
  • 1-pound carrots (5 to 6 medium)
  • 1/2-pound celery (4 to 5 ribs)
  • 1 pound Sweet Potatoes (4 small)
  • 4 garlic cloves, smashed and peeled
  • 2 tablespoons olive oil
  • Collard greens
  • 1/2 ounce dried mushrooms such as porcini, oyster, or shiitake
  • Half bunch fresh parsley leaves and stems or just use the stems
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 to 2 cups vegetable scraps from fridge or freezer, optional
  • 1 teaspoon sea salt, optional
  • 12 cups water, preferably filtered

Directions

  • Preheat the oven to 425 degrees Fahrenheit. To roast the veggies, use a rimmed baking
  • sheet or a 9-inch by 13-inch baking dish.
  • Peel and coarsely cut the onion into 1-inch sections. Clean the carrots and celery and chop them into 1-inch slices. Rinse the sweet potato and cut them in half or halves if they are big.
  • On a baking sheet or pan, combine the onion, carrots, celery, tomato, and garlic. Roast for 15 minutes after tossing with olive oil. Cook for another 15 minutes after stirring the veggies. Stir once more, then roast for another 10 minutes or so, or until the veggies are well browned and the Sweet Potato Skins are collapsing in.
  • Set aside for 5 minutes after covering dry mushrooms with roughly 1/2 cup cold water.
  • Fill a tall stockpot halfway with roasted veggies. 1 cup water, stirred about in the baking sheet or pan, scraping up as much of the browned parts adhered to the bottom as possible. In the stockpot, pour over the veggies.
  • Add the parsley, thyme, bay leaves, Collard greens, and any leftover vegetable scraps, as well as the salt (if using).
  • After adding the partially rehydrated mushrooms, strain the water through a fine-mesh strainer to collect any grit. Add the filtered mushroom water to the veggies in the saucepan.
  • Add 11 cups of water to the pot. Bring to a boil, then lower to low heat. Cook for 45 minutes, slightly covered.
  • if some heat is required you can add a pinch of chili powder to your taste.
