Ulcer friendly chicken noodle soup

 Ingredients:

  • Olive oil – ½ Tablespoon
  • Trimmed and chopped celery – 1 Cup
  • water- 2 Quarts
  • Peeled and diced carrots – 2 Cups
  • Low – sodium chicken flavor cubes – 4
  • Thyme – ½ Teaspoon
  • Salt – ½ Teaspoon
  • Turmeric – ½ Teaspoon
  • Uncooked egg noodles – 3 Ounces
  • Chicken breast with bone and skin removed – 2 Cups
  • Frozen peas – 2 cups

 Preparation:

  • Take a large pot and add 1/2 tablespoon olive oil. Add 2 cups trimmed and chopped celery and heat until translucent or a medium heat.
  • Add 2 quarts water, 2 cups peeled and chopped carrots, 4 low-fat chicken bouillon cubes, ½ teaspoon thyme, and 1/2 teaspoon salt to the same pot and boil well.
  • Add 3 ounces of large egg noodles to the boiling water. Stir. boil the mixture again, reduce heat, and cook for another 8 minutes until noodles are tender.
  • Add 2 cups of chicken breast meat and 2 cups frozen peas. Boil again, gradually reduce heat, cover it using the lid, and keep the pot below the boiling point over medium-low heat for 5 to 10 minutes.
